Our Single Tree Olive Oil

The Story of Phaedra

Blossoming Insubordination

“PHAEDRA” echoed from the rafters inside a remote Greek village church from a beautifully irreverent new godmother, leaving the village congregation shocked at such an act of disobedience from a teenage figure.

The custom of the era placed ceremonial naming responsibility of a newborn onto the godmother and she was to act as nothing but an echo, restating a traditional, pre-authorized parental, and patriarchal name designation.

Phaedra’s Legacy

A Defiant Spirit

This spirit of defiance carries on within our products. We’ve been trusted with a gift from nature and it’s our responsibility to create beauty from this land on our own terms. We go forth with wild irreverence, so you may dare, create, and inspire next.

Our Process

Premium Olive Oil our Way

  • Handpicked

Picking olives is equal parts art as science, and is just as impactful to an oil’s final character as the growing season itself. Handpicking assures that only the finest olives are chosen and guarantees protection from destructive harvesting processes, eliminating the need for post collection recovery treatments.

  • Single Tree Technique

The moment an olive is picked directly influences the flavor, nutritional value, and essence of the end product. That is why we harvest each tree individually, one at a time, when they are ready, and not as a grove. This single tree technique rewards our olive oil with unrivaled body, bouquet, and personality.

  • Agourelaio

The harvest of unripened green olives, known as “Agourelaio”, facilitates maximum nutritional benefits and flavors. Harvesting this way guarantees maximum polyphenol content with near zero acidity, creating an anti-inflammatory, anti-oxidant oil your body can genuinely feel.

  • Freshly Milled

Tree to cask in under twelve hours certifies minimal olive degradation for the most aromatic, nourishing, freshest green oil possible. Living oil juiced fresh from the tree.

  • Cold Pressure Extraction

One cold crush is all it takes to extract the purest green oil possible. No heat, and certainly no carrier solvents ever come near our organic workshop. Just a thorough cleanse through fresh spring water, and raw pressure.

  • Small Batch

We package just like we farm, and process; by hand, and in small batches. Our single-tree method might not be cost efficient but it pledges the preservation of purity and assures acre specific origin.

Terrain

Rooted mid-mountain, this moderately steep grove descends into a twisting, seasonal riverbed. Inaccessible with modern harvesting machinery, Koumaria is the largest of our groves.

Nestled below the steepest ridge of by the summit of Mount Foniskos, what began as wild seedlings generations ago, this aggressively sloping micro-grove now yields the most expressive, fragrant oil from our groves.

This mountaintop acreage features a steep gradient and challenging rock obstacles. Many of the ancient trees have adapted unique shapes to cope with the challenging environment rooting over the top of boulders, and growing partially side-ways to cope with strong winter winds.

Located just below Deli, this sub-summit grove has an aggressively steep alpine slope that continues into the wild forest below. Wild birds and animal life are common sights on this remote acreage.

Sitting adjacent to Magglari, this acreage is nestled just below the highest point of the nearest western foothill of Mount Foniskos. Bordered by a seasonal creek and wild trees, Katahari enjoys uncharacteristic gentle soil for her altitude. As a result, her oil finds a gentle balance of alpine character.

Located just below Elitsa, this mid-mountain plot overlooks valleys to the west, and distant towns on the horizon. Surrounded by a wild forest below, Tserani is a common resting point for mountain goats on their summit climbs.

Grown in the middle of Mount Foniskos, these groves have made their home just below a 60ft cliff face ascending to the summit. A beautiful combination of mixed sandy soil and fresh rain runoff from the rocks above gives Thymari’s oil a distinctively smooth experience.

A unique ridge of Mount Foniskso gifts this high elevation grove a moderate gradient with mixed sandy soil. Elitsa's mountain basin allows the trees to readily absorb fresh mountain runoff with great ease.

Located just below the northern rocky summit of Mount Foniskos, this historic plot began from wild seedlings generations ago. Known by locals as a scenic overlook, this near summit ridge has spectacular views of the winding river and villages far below. Pezouli’s oil presents concentrated aromas thanks to the highly limited yield per tree, and unprotected exposure to the elements.

An Ancient Groves favorite, Ahladia is located mid-mountain and gently descends to a seasonal creek bed. This acreage is most loved for her multiple heirloom pear trees that typically provide fresh fruit during harvest times.

Adjacent to Ahladia, this mid mountain grove enjoys a gentle gradient descent into a seasonal creek bed. Still inaccessible with modern machinery this parcel is known for her heirloom almond trees.

The summit of Mount Foniskos nearest foothill to the West. Separated only by a narrow winding river this grove encompasses mixed boulders, wild trees, and frequently attracts songbirds.

At the most concave point between Mount Foniskos and the largest adjacent foothill, Aspropoulia rests at an intersection point where a seasonally active creek meets a flowing river below.

Where the soft edges of Mount Foniskos extend into the surrounding foothills and riverbed below. Darsinou is rooted at the edge of wild forests and is known for her illustrious spring wildflowers.

Located mid-mountain on Mount Foniskos, this steep grove winds her way through two seasonal creeks. A beautiful balance of untamed mountain elements and rare meadowland soil gift Paraskeva oil powerful aromas, and a smooth flavor.
